Ingredients
- 1 Sachet of Cetofine 21 High-Protein Velouté or Soup
- Salt
- 2 Egg whites
- Chives, tarragon, basil, ginger, spices, edible flowers as desired.
Instructions
- Crack 2 eggs and keep only the whites, beat the egg whites with a manual whisk or an electric mixer. When they are well beaten, gently add salt and increase the speed of the whisk to make the egg whites stiff.
- Optional: put the whipped egg whites in small round silicone molds (or muffin tins), fill them using a large spoon and smooth with a spatula. Bake for 3 minutes in a preheated oven at 180°C (356°F).
- Dissolve your velouté sachet in 200 ml of water. Place the egg whites on your heated Cetofine 21 velouté preparation.
